Our chicken, duck, and turkeys are all heritage breed and free-range. We do not regularly have cut-ups, most birds are sold whole. Ducks and turkeys roast fast and uniformly with dark meat and sublime flavor. Chickens are most often not suited for roasting unless cooked at a high heat with basting, but they are excellent for any kind of braising soup or stew preparation. We offer a choice of older stew hens and young, tender roasters (coq au vin).
